Menya Kanae Hokkaido Ramen

A passion project, Menya Kanae was founded by Koga Akihiko because of his deep love for authentic Hokkaido Miso Ramen.

His aim is to introduce his ideal, perfect Miso Ramen to the people in Singapore.

It took half a year to create Kanae's Signature Miso ramen and Ebi Prawn ramen using ingredients imported directly from Japan, Specialty miso from Hokkaido.

  • 味噌 Miso: The most important ingredients

    Water is the key of making miso.
    Iwata jozo uses high-quality groundwater provided by the nature of the Shikotsu area.
    Ko itten miso is made of this pure natural Hokkaido water and carefully selected high-quality whole soybeans and also made by the craftsmanship accumulated for over 120 years.

    Menya Kanae is always trying to maximize umami from this high quality Hokkaido miso in our Ramen.

  • えび出汁:Specially house made Ebi broth

    Combining the rich and creamy notes of Japanese-style pork bone ramen broth with the aromatic blend of grinded big prawns, lobster bisque to create Kanae's signature aromatic and luscious Ebi broth.
    Brought to life through a rigorous process and months of experimentation with hundreds of different ingredients,
    we have managed to produce a piquant broth that is boiled for hours and made with premium and quality ingredients that bring out the natural sweetness of big prawns to our Ebi ramen.

    We use noodles specially made for Mena Kanae.
    Enjoy its robust wheat flavor, firm and springy texture that pairs perfectly with Menya Kanae's rich Ebi and Tonkotsu soup that is an integral secret to its deliciousness.

Menya Kanae Founder

Menya Kanae was founded by Koga Akihiko because of his deep love for authentic Hokkaido Miso Ramen.

Koga’s venture into the F&B industry started with Tamoya Udon at Liang court in February 2013.

After the success of his first restaurant, Koga brought in the famous Japanese Mazesoba brand Menya Kokoro at Suntec City.

Now he is supporting Tamoya Udon, Menya Kokoro in Singapore and other famous Japanese F&B brands in many countries.
